• 1 glass of milk
  • 2 glasses of cream (30% or 36% fat)
  • 5 egg yolks
  • ½ glass of sugar
  • pinch of salt
  • 1 ½ tablespoon of matcha powder


  1. Warm milk and cream together in a pot (steam it). But be careful not to boil it.
  2. In the meantime whipp eggs with sugar, until you get a smooth mass.
  3. Add matcha powder and mix everything again.
  4. Add pinch of salt.
  5. Slowly add warmed milk and cream to previously whipped eggs with sugar and matcha powder.
  6. Pour everything back to the pot and warm it – but be careful not to boil it!
  7. The mass should thicken – let it cool down a little.
  8. Put the cold mass into the ice cream freezer and keep it until they’ll look like ice cream.
  9. Put it into container and then to the freezer for a few hours.
  10. Serve with a leaf of mint.
